Blender Oatmeal Pancakes - QUICK & EASY


1x cup quick oatmeal

1x ripe banana

1x egg

1tsp vanilla extract

Approximately 3/4 cup (more or less) milk alternative to reach desired consistency (depending on if you are making pancakes or flapjacks)

Ghee - for cooking.

Optional: 1 TBSP protein powder;

Dash of cinnamon (blood sugar balancing)


Add all ingredients (apart from ghee) to the blender and blend until smooth.

Add ghee to a hot pan and then add pancake mixture. Pancake is ready to turn once you see bubbles/holes appearing all over the pancake.

Serve with nutbutter/maple syrup/honey/sliced banana/berries etc.

A truly hearty and delicious breakfast or snack providing a healthy source of carbohydrates, protein and cholesterol lowering fibre.

The soluble fibre helps to control blood sugar, while also providing antioxidants and B-vitamins.
