Sweeteners in Baking

Coconut Sugar:

This is my go-to granulated sweetener. It is made from the sap of the flower buds of the coconut palm tree. It is available from Amazon, Whole Foods, health food shops or main stream grocery stores. Coconut sugar has a delicious caramel flavour and is similar to brown sugar. Coconut sugar can be substituted in equal quantities if replacing white cane sugar in a recipe.


Honey:

I use raw, mild-flavoured honey in baking. Honey is not vegan but you can use maple syrup in place of honey in recipes if you are following a vegan diet.


Pure Maple Syrup:

I love maple syrup as a sweetener not only because of it's delicious taste, but it also contains lots of vitamins and minerals. Many maple syrups are mixed with cheap corn syrups containing artificial flavours, so ensure you are buying 100% pure maple syrup. It can be pricey, so I buy big bottles and store it in the fridge.
