Dressing Ingredients:
Approximately 50g tahini paste
1 small garlic clove, crushed
½ tsp tamari soy sauce
½ tbsp honey
1 tbsp apple cider vinegar
Himalayan salt
MCT oil / vegetable/seed oil - (optional) to increase good fats in meal
Instructions:
Whisk together all the dressing ingredients in a bowl along with ½ tsp of salt and about 2 tbsp of water. You want the consistency to be smooth and thick but pourable, a bit like honey; add a tiny bit of extra water or tahini paste if needed and whisk well.
This dressing is delicious poured generously over chopped raw kale, cabbage, carrots etc. Toss all the vegetables and salad dressing in a bowl and allow to stand for an hour or more to allow the vegetables to soften and absorb the flavours.
Healthy AND delicious.
